Homemade sweet palmeritas are a simple and very tempting classic to accompany mate, coffee or an afternoon snack.
They turn out golden, crispy, with thin layers of dough and caramelized sugar on the edges.

Ingredients
For homemade dough:
- 300g of all-purpose flour
- 1 pinch of salt
- 180g of cold butter
- 140 ml of cold water approx.
- 1 tsp of lemon juice or vinegar
To form the palm trees:
- 120 grams of sugar
- 1 tsp of cinnamon, optional
- Extra flour, for rolling
Preparation
- Place the flour and salt in a bowl. Add 40g of cold butter in cubes and mix with your fingertips until just combined.
- Gradually add the cold water along with the lemon juice or vinegar. Mix until a firm dough forms, without overworking it.
- Wrap the dough and put it in the refrigerator for 20 minutes.
- Place the remaining cold butter between two sheets of parchment paper and flatten it with a rolling pin into an even rectangle. It should be cold but still pliable.
- Roll out the dough on a lightly floured surface, forming a rectangle. Place the butter in the center and close the dough like a package.
- Roll out the dough in one direction until it forms a long rectangle. Fold the dough into thirds, like a letter.
- Wrap and refrigerate for 20 minutes. Repeat this stretching, folding, and chilling process three more times. This step helps to form the layers.
- Once the dough is ready, sprinkle the work surface with sugar instead of flour. Roll out the dough on top until it is about 3 mm thick.
- Sprinkle more sugar over the surface of the dough. If you like, mix the sugar with cinnamon for extra aroma.
- Fold both long sides of the dough towards the center. Fold each side back towards the center, and finally, fold one half over the other, like a book.
- Cut slices approximately 1 cm thick with a sharp knife.
- Arrange the palmiers on a baking sheet lined with parchment paper, leaving space between them because they will open and expand during baking.
- Bake in a preheated oven at 200°C for 12 to 15 minutes. When they are golden brown on one side, carefully turn them over and bake for another 5 to 8 minutes, until golden brown and caramelized.
- Remove them from the oven and let them cool on a wire rack or plate. They will become crispier as they cool.
